Ratatouille with brown rice

Ingredients:


- Brown rice
- Squash 1 pc (or 2 small)
- Tomatoes - 2 pieces
- Bulgarian pepper - 1 pc
- Onion - 1 piece
- Garlic - 2-3 cloves
- Sunflower / olive oil
- Parsley (you can add thyme, dill)
- Seasoning "Provencal herbs"
- Black pepper
- Oregano

 

Preparation:


1. Grind and fry the onion in a frying pan.
2. Cut the tomatoes, peppers and zucchini cubes. Add to the onions and fry. Season with spices, add chopped parsley.
3. Cover and stew for about 10-15 minutes.
4. Cook rice

Note:

-serve with sprinkled parsley as the main dish or as a side dish (on the main photo comes along with brown rice)

- Rice can be replaced with barley (pearl barley) porridge. Delicious!
