Vegetable soup with beans

Ingredients:
- Beans 1 pound (used "Navy beans")
- Water
- Vegetable stock (unsalted) - sold in the supermarkets and includes: carrots, mushrooms, tomatoes, onions, red peppers, celery, bay leaf, thyme, black pepper.
- Unsalted butter - 1/2 stick (50 gr)
- 2 beets
- 1 whole onion
- 1 tomato
- Parsley
- 2 bay leaves
- Spices (according to your taste): black pepper, garlic, coriander, oregano, etc.

Preparation:

1. Beans soak overnight. For example, Navy beans are small and easy to prepare. When I forget to soak them, so i do it in the same day for a couple of hours, or even less (I drown them in a water with stock so that they are soaked).
2. Grate beets on a large grater. Cut the tomato.
3. When the beans are infused, add water and bring it to the boil. Add a whole onion and boil for 10 minutes.
4. Then, add all the remaining ingredients (beets, tomato, spices and butter). Cook on the medium for about 25-30 minutes (until the beans are soft).
5. Serve with a sour cream and sprinkled parsley.
Note: the number of ingredients in the soup (for example, more beans, vegetables, spices), if desired, can vary.

Сonclusion: probably, for now, one of my favorite soups. Beans and beets are miraculously combined together, and addition of sour cream gives a gentle balanced taste.
