Rye Ravioli

Ingredients:
- Rye flour - 1 glass
- Wheat flour (whole-grain) - 1 glass
- Water - 1 glass
- Riсotta cheese - 500 g
- Parmesan cheese - 100 g
- Nutmeg (if desired) - on the tip of the knife, less than 1/4 tea spoons
- Lemon juice - 2 teaspoons
- Ground black pepper
- For serving: tomato sauce, sunflower, butter or sour cream. So this dish is Italian, then tomato sauce is the most popular when served with ravioli.

Making the dough:
1. Mix rye & wheat flour with water. Knead the dough.

Preparation:

Mix Riсotta cheese, Parmesan, Lemon juice and pepper together.
2. Roll out the dough thinly and cut into thin circles.
3. Put cheese stuffing on the bottom circle. Then cover the top with a second circle of the dough and press the edges with a fork.
4. Boil water, add there sunflower oil and put in prepared Ravioli
5. Boil until they start to float. It is necessary to try, whether the dough is ready.
6. Best served with tomato sauce

 

 

Conclusion: The dough turned out soft and gentle (the main thing is to roll it in a thin layer). Because the filling contains Parmesan, Ravioli is best combined with tomato sauce. Very very delicious.

If you do not add Parmesan and seasoning, it will be very similar to Vareniki (then it's better with a sour cream)
